"El jefe" means "the boss" in Spanish (pronounced hefe) and in German "Hefe" means yeast. #panlingualpun ... So we thought it the perfect name for our hefeweizen - a classic unfiltered bavarian wheat beer style with banana and clove vibes.
The predominant aroma of this beer is the banana, and at first sip, the banana continues, but it is balanced out by a spicy clove flavour. The high wheat content in the beers brings with more body and a smoother mouthfeel
Both the banana and clove characteristics come from the yeast that we use. When yeast ferments wort (the sugary malted barley juice that becomes beer) it converts the sugars into primarily alcohol and carbon dioxide, but it also produces other flavour compounds like esters and phenols. While some yeasts for many styles are selected for their flavour neutrality - to allow the malt and/or hops to take the front stage - with a hefeweizen, the yeast itself drives the flavour of the beer.
We brew El Jefe once a year as part of our homage to the Oktoberfest season in the northern hemisphere.
