This is an old school IPA that pours deep gold in colour with a large white head. The malt profile is not lean, but not complicated either, creating a dry sessionable backbone for the hops. Hops are Topaz and Galaxy from Australia, and Cascade and Citra from the US. We’ve used them in a restrained way (for a change) wanting the malt to still be able to peek through. The solid bitterness you need is there, and it lingers on the roof of the mouth in the way that OG hopheads will love. The hops bring flavours of pine and grapefruit, but it’s not a sweet fruity lolly-bomb which seems to dominate the market these days. Instead, it’s a beer for a mature palate, one that doesn’t have a sweet tooth and appreciates balance and the more subtle elements you can actually taste when someone is not shoving candy down your throat - like herbaceousness, bitter orange and a touch of goji berry.
